Loin of Spanish pig and Clouds

 

Ingredients to 4 serve people
•  12 lockets of loin of scoured pig.
•  8 spoonfuls of olive oil
•  salt and pepper to the pleasure

Procedure. In Teflon saucepan, put the olive oil and the loin to be gilded.

Ingredients for the sauce

•  mature Tomatoes
•  pepper to the pleasure
•  thyme to the pleasure
•  laurel leaves
2 oregano spoonfuls
1 spray of parsley
1 spoonful of rosemary
¼ chili guaje
¼ chili pepper
1 onion
1 big banana
10 plums
1 ajonjoly spoonful
2 spoonfuls of raisins
¼ cup of white wine
¼ cup of sugar (or according to your pleasure)

Cook, peel and mill all the tomatoes. (cook for 20 minutes). Put in a medium pot to soft fire. Add all the aromatic herbs. Together with the sugar, and sesame. Then add the plums, the raisins and the banana, when the banana is very tender retire of the fire. Pour the sauce, already prepared, on the gilded loin to serve with rice, white vegetables, or fresh salad.

Nuves

4 cups of cow milk
Sugar to pleasure
Raisins, cinnamon in cracks
1 spoonful of powdered cinnamon
1 nail of scent
1 pinch of salt
2 spoonfuls of white wine
3 spoonfuls of starch of corn
2 big eggs
Take 2 cups of milk and add the 4 egg yolks and the starch well shake.

Put the 2 remaining cups of milk to boil, move constantly with the cinnamon, the sugar and the clove scent.

When it is well cooked, before it breaks in boil, add the remaining milk with the yolks, the starch, and the tiny piece of salt until it breaks in boil. Allow to stay. Beat the white, about to snow with a pinch of sugar and put to the refrigerator. With encircling movements add the whites about to snow. Serve lukewarm or icy
